Lychee Martinis!

We were stuck home ALL day today with the nonstop cold rain and threat of ice. I was supposed to go for a girls' massage day for Lucy's birthday at Rock Barn, but due to the weather, it was cancelled :( I have been disappointed and just bummed all day and SICK of all this bad weather. I need some sunshine darn it!

I told Ceddy I HAD to get out of our house, so we headed over to Kyoto's in Mooresville for dinner, SUSHI for me, YUM!

Then we hit Hairy Peter on the way home and guess what I found on the canned fruit aisle....LYCHEES! These are an Asian fruit native to China and taste sort of pearish and grapefruitish, hard to describe. I had a lychee martini for the first (and only) time in Montreal with my season gals a few years back (along with Jessie da-da-duh-duh who drove our crazy asses back to the U.S. after martinis and drinking a METER of beer at a pub, I will try and post the pic of this later, it is hilarisous!) and I loved them, but have never seen lychees around here. Bought me a can of lychees for $3.99, came home and we made up a round of them. Here is the recipe we used, thank you Bethanney Frankel of Real NY Housewives:

2 parts vodka
1 part lychee syrup (you can get a 20 oz can of lychees in syrup)
1 part club soda
2 whole lychees for garnish

Mix all ingredients with a shaker full of crushed ice and strain into a chilled martini glass, garnish with 2 lychees. YUMMO but warning, these are STRONG! We had to add a little extra lychee juice to the first round, but I think after you drink one, the recipe is fine!

Just wish I had spring, summer and fall here to drink one with me, this WINTER gal misses her other 3 seasons!!!!!
